The illustrious Mendoza clone Chardonnay was planted 1992 to a gentle east facing slope right next to Block 3. Grapes are whole bunch pressed and gravity fed to seasoned French oak for a wild indigenous yeast vinification. Ferments remain in barrel for a long and languid sixteen months maturation. A multi dimensional Chardonnay in the well established, mouth filling style of Central Otago. The palate is where it all becomes more serious with an array grilled nut and baked goody flavours, the deep schist soils of Block 2 are conspicuous and up front in the lengthy mineral finish.

Evelyn County Estate continues to make thumping award winning Chardonnays. Chardonnay was one of the first three varieties to be planted at the vineyard in 95, whilst the first vintage Chardonnay was selected to be included on the Sydney Opera House's Bennalong Restaurant wine list. The year's growing season allowed for ideal fruit ripeness, whilst maintaining perfect natural acidity, a feature that is becoming pleasingly predictable in fruit sourced from the Evelyn County vineyard. The fruit displayed an intensity and power that carried through to the nose and the palate of the resulting wine.

Chardonnay vines fare exceptionally well in Margaret River, as appropriate shading yields intensely flavoured fruit with excellent natural acidity. The afternoon sea breezes typical of the region, cap the daytime temperatures and produce cool summer nights for which Margaret River is renowned. The balmy climes encourage ripening of the white varieties as flavour ripeness is achieved at lower Baumes with excellent acid retention. Grapes must be picked from midnight to 7am and are processed separately without delay to preserve quality and freshness.

Les Folatieres takes it's name from local folklore, which recounts how the slopes around Puligny would come alive on warm summer nights with St Elmo's fire. The distinguished climat of Les Folatieres is the largest of Puligny's Premiere Cru vineyards, it lies near the summit of a slope midway between Meursault and Montrachet, where the elevated mesoclimes impart a juicy minerality to the wine. Domaine Sauzet acquires much of his fruit from the upper reaches of the vineyard, to construct a richly endowed wine of great elegance, intensity and length.

It was in the very village of Puligny that Etienne Sauzet established himself as one of the most significant names in Burgundy. His vintages were remarkable for their purity of fruit and marvelous expression of soil. Today, the Chardonnays of Puligny Montrachet and Domaine Sauzet are amongst the most highly sought and revered wines in the world.

The quality of fruit is ultimately determined by microclimate and terroir, clays, siliceous sands and lime soils. The Domaine of Etienne Sauzet is made up of twenty six acres, much of it at the heart of the premier crus vineyards. Etienne Sauzet was born 1903, heir to a few parcels of vine, to which were added further allotments until he accumulated twelve invaluable hectares of precious Montrachet terroir. Eden Road have assembled the best barrels Chardonnay from the distinguished Courabyra and Maragle vineyards, a mere 400 cases are made each vintage. Delicate handling, a repose on sedimentery yeast lees and judicious exposure to oak, have infused beautiful creamy mouthfeel, ripe varietal acidity and luxurious slate minerality. Bernard Dugat is a thirteenth generation winegrower. Domaine Dugat-Py retain ten hectares of the most superior blocks in all of Le Vignoble de Bourgogne, even the youngest vines are fifty or sixty years of age. Viticulture is completely biodynamic and fully organic, all work is done by hand, except for those duties which are best carried out by a horse. The finished Morgeot Blanc is treated to eighteen or twenty months maturation in completely new oak, a mere few hundred bottles are produced each year.

Towards the southwest of Chassagne-Montrachet, alongside Route de Santenay, lies the Abbaye de Morgeot. Domaine Dugat-Py retain a very small part of the elite Climat at Morgeot but the quality of fruit is without peer. Managed to the same holistic viticultural techniques which would have been employed when the ancient Abby was built, the limestone clay soils yield one of the greatest white wines in the world, to be treated to an extended maturation in completely new French oak barrels from the cooperage of François Frères.
